KABAJ is a model for what could be. Jean Michel and his Wife Katja Kabaj chose to champion the old ways with their wines. Specializing in skin contact wines, they farm their 10 hectares of grapes in Goriška Brda, Western Slovenia, with traditional methods and biodynamic practices. Jean Michel’s interest in skin contact white wine eventually led him to Georgia. There he studied wine making at a monastery. He brought this knowledge and 9 Georgian clay qvevri back with him. Having consistently produced a range of exemplary original wines like this they prove it is not necessary to make the modern fruity style of wines so ubiquitous today.
The winery was four times selected among top 100 wineries in the world by the elite American Magazine, Wine & Spirits, confirming their passion for winemaking.

ROUND FIVE: NOVEMBER 12TH-25TH Osuri (potatoes and cheese), Amber: TBD
ROUND SIX: NOVEMBER 26TH-DECEMBER 9TH Kubdari (spiced lamb), Amber: TBD

Order a glass of the featured wine OR that week’s special khachapuri and earn a stamp on your Amber Autumn Passport.
Stamps are given for EITHER the wine or khachapuri special.
